Preparation and Usage

Black Venus rice flan with Ponti Cold Rice Salad Topping in sunflower seeds oil.
Ingredients
200g Black Venus rice
280g Ponti Cold Rice Salad Topping in sunflower seeds oil
8 Prawns + 1 per portion for decoration
70gr Feta cheese
150gr peas
Half an onion, thinly sliced
4 leaves of mint
Vegetable stock q.s.
Extra virgin olive oil q.s.
Pepper & salt q.s.


Method


In a saucepan, saut the thinly sliced onion on low heat. Add peas and brown them for a few minutes then season with salt and pepper. Cover with vegetable stock and cook for 15 minutes. Once cooked, mix everything in the blender adding mint and extra virgin olive oil and keep warm.
Bring a pan of water to the boil, add cooking salt and cook Venus rice until al dente. Peel and devein prawns, cut them into uniform pieces and pan-fry them quickly, 2 minutes per side. Set aside a few prawns for the final decoration of the dish and add the others to the rice together with Ponti Cold Rice Salad Topping in sunflower seeds oil. Season with salt, pepper, extra virgin olive oil and stir in well. Fill some aluminum backing cups and leave to cool in the fridge. To plate the dish: place some creamed peas in the center, remove the rice flan from the backing cup and arrange it on the cream. Finish with some crumbled feta cheese, a few mint leaves and a prawn.
