Vinification Details
This native variety has a big personality and intense fragrance, Grillo grapes produce wines with body and continue to evolve as they age. Fermenting part of the must in steel at a controlled temperature maintains the variety's flavour and scent compounds, the foundations of exciting, full-flavoured wines, while the fermentation and ageing in wood of the remaining must develops spicy notes which give the wine more complexity. Ageing in bottle is an essential step to really form the wine's personality
